Ingredients

Quick and easy quesadillas

  • 1 tsp Coconut or Avocado Oil
  • 1 Tortilla
  • 2 Mushrooms (Sliced)
  • Orange Pepper as much as you need (Chopped)
  • Black or Green Olives (Sliced)
  • Zucchini (Chopped)
  • Plant Based “Meat” of choice (Cauliflower ground, Veg Ground, Lentils, Beans)
  • Plant Based Cheese
  • Sauce of choice

To Dip:

 

  • Salsa
  • Plant Based Sour Cream or Coconut Kifer (add a little chili powder and cayenne for some kick)

Directions

  1.  Cut a line halfway in tortilla shell
  2.  Divide ingredients into two parts depending what you want on each layer. Save the cheese. Then using top quarter add some ingredients there. Leave a Little space for the fold then add more ingredients to the next quarter. This means the top half of the tortilla will be filled with the ingredients. Then the bottom left use that quarter to load your cheese on to and the remaining quarter will be empty unless you choose to add hot sauce or something else. 
  3. Now take the quarter that is empty and fold it up and over. Then fold that over to the left. And finally down to complete it into a triangle of sorts. 
  4. Put oil in pan and heat. 
  5. Fry tortilla on med heat. Flipping once cheese is melted, and it is golden on both sides. 

This recipe can be made into so many things. Try making it more of a sandwich with lettuce, tofu, mustard, and tomato. Even a breakfast with maple syrup, berries, and peanut butter. Don’t forget pizza night! This is perfect to put pizza sauce with all your favorite toppings. Fold and fry for fast easy and healthy meals.
