Mushroom Walnut Chili

Ingredients

 

  • 1 Onion Copped
  • 1 Tbsp Avocado Oil
  • 2 Cloves Garlic Chopped
  • 1 Carrot
  • 2 Stalks Celery
  • 1 Jalapeno
  • 1 Bell Pepper
  • Package of Shitake Mushrooms
  • 1/2 Cup Walnuts
  • 2 Cups Crushed Tomato
  • 1 Cup Kidney Beans cooked
  • 1 Cup Black Beans cooked (Or any bean of choice)
  • 1 Tbsp Tomato Paste
  • 2 Tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Chipolte
  • 1 tsp Paprika
  • 1 tsp Tumeric
  • 1 tsp Cinnamon
  • S&P

Directions

    Use a big pot or Dutch oven. Heat the oil in the bottom and add your onions . Cook for a few minutes or until onion is translucent then add your garlic. Continue to cook 2 minutes and add carrot, celery, and peppers. Turn heat down to med and let this cook for 5-7 minutes. Once this happens you can add your tomato paste. Stir and coat everything in the paste. Let the paste become a little brown and add your spices. 
    Now everything will seem a little dry, That’s okay. Let cook another minute and add your crushed tomato. Stir everything very well. Keep heat on med and put the lid on. 
    In the meantime use a food processor or a knife to finely chop mushroom and walnut. If using a processor do so separately. Once this is done you should be ready to add to your pot. 
    Taste tests the mixture first and see if the levels of spice are good enough for you. If it’s too strong add some water or broth. 
    Add your mushroom mixture along with your beans and mix well. Once hot turn burner to low and Let this simmer for as long as you would like. The longer, the more flavor will come out. If its too thick add water or broth to your desired thickness. 
    Now a lot of people love corn in their chili. So obviously make it your own by adding anything you can dream of!
