Ingredients

 

  • 1/4 Cup Extra Virgin Olive Oil
  • 1/4 Cup Pomegranate or Pure Blueberry Juice
  • 1/2 Lime Juiced
  • 1 Tsp Dijon Mustard
  • 2 Navel Oranges Peeled and sectioned
  • Zest of Orange & Lime 1 tsp
  • 1 Package of Spinach Washed and Dried
  • 1/2 Can Rinse Chickpeas
  • 1/4 Red Onion, Sliced Thinly
  • 1/2 Cup Sprouts or Micro Greens
  • 1/4 Cup Chopped Walnuts

 

Directions

    Make dressing by combining olive oil, juices, mustard, and zest. Set Aside
    In a large bowl or serving platter arrange spinach. Then top salad with chickpeas, onion, sprouts or microgreens, & walnut. Finish with your oranges.
    Drizzle dressing on the salad as you like it! 
      For an oil free version of the dressing, simply omit the oil and add more juices. Maybe even a little lemon in there to up the flavor! 

 

    Try adding fresh pomegranate seeds to the top for even more added flavor!
