Citrus & Spinach Salad

Ingredients
- 1/4 Cup Extra Virgin Olive Oil
- 1/4 Cup Pomegranate or Pure Blueberry Juice
- 1/2 Lime Juiced
- 1 Tsp Dijon Mustard
- 2 Navel Oranges Peeled and sectioned
- Zest of Orange & Lime 1 tsp
- 1 Package of Spinach Washed and Dried
- 1/2 Can Rinse Chickpeas
- 1/4 Red Onion, Sliced Thinly
- 1/2 Cup Sprouts or Micro Greens
- 1/4 Cup Chopped Walnuts
Directions
- Make dressing by combining olive oil, juices, mustard, and zest. Set Aside
- In a large bowl or serving platter arrange spinach. Then top salad with chickpeas, onion, sprouts or microgreens, & walnut. Finish with your oranges.
- Drizzle dressing on the salad as you like it!
- For an oil free version of the dressing, simply omit the oil and add more juices. Maybe even a little lemon in there to up the flavor!
- Try adding fresh pomegranate seeds to the top for even more added flavor!
